Carol's Syrup for the Oranges

Ingredients
- 1.1.75 cup sugar
- 2.1.75 cup water
- 3.orange rind, strips; cut from the oranges in the Oranges Oriental recipe
- 4.0.25 cup water, added after boiling
- 5.2 tablespoon Grand Marnier
- 6.2 teaspoon lemon juice
Method
- 1.Boil up 1¾ cups sugar and 1¾ cups water.
- 2.Add the orange rind strips to this and boil about 10 minutes.
- 3.Remove the strips and place on a lightly oiled pan.
- 4.Return the syrup to heat and boil uncovered, a further 5 minutes, until pale gold and syrupy.
- 5.Remove from heat.
- 6.Add an extra ¼ cup water.
- 7.Stir till mixed through syrup.
- 8.Cool.
- 9.Stir in 2 tablespoons Grand Marnier and 2 teaspoons lemon juice.
Notes
- Serve as an accompaniment to Oranges Oriental.
- The candied orange rind strips are placed on a lightly oiled pan — they become a candied garnish.
