Ingredients
- 1.2.5 kilogram duckling, roasted; skin pricked and excess fat trimmed
- 2.orange juice, for sauce; quantity not legible
- 3.wine or sherry, for sauce; type and quantity not legible
Method
- 1.Roast the duckling as per the basic roasting method (see to-roast-a-duckling).
- 2.Prepare the orange sauce from the sauce ingredients while the duck roasts.
- 3.Serve duck with the orange sauce.
