Ingredients
- 1.12 chicken thighs, small; seasoned with Lawry's Seasoned Salt & Pepper
- 2.12 chicken drumsticks, seasoned with Lawry's Seasoned Salt & Pepper
- 3.onions, sliced
- 4.4 garlic cloves, crushed
- 5.4 tablespoon oil
- 6.60 gram butter
- 7.3 teaspoon cumin, coarsely ground; crush whole spice with rolling pin
- 8.3 teaspoon coriander, coarsely ground; crush whole spice with rolling pin
- 9.1 teaspoon cinnamon, crushed
- 10.5 bay leaves
- 11.1 teaspoon cloves
- 12.4 cup boiling water, combined with chicken stock to make chicken stock liquid
- 13.1 teaspoon chicken stock powder, dissolved in the 4 cups boiling water
- 14.1.5 teaspoon turmeric
- 15.teaspoon medium curry paste
- 16.pinch saffron, optional
- 17.24 prunes
- 18.2 tablespoon raisins
- 19.Bombay mix, to serve
Method
- 1.Brown seasoned chicken pieces in 220° oven for ½ hour. Set aside.
- 2.Brown onions in oil & butter in frying pan till golden.
- 3.Add garlic, cumin & coriander. Stir for 5 minutes.
- 4.Place chicken, onions, garlic and spices in large casserole dish.
- 5.Add 4 cups chicken stock, turmeric, saffron (optional) & curry paste.
- 6.Pour over chicken to just cover.
- 7.Cook in 180° oven, covered for 1½ hours.
- 8.Add prunes and raisins. Uncover for last ½ hour.
- 9.Attend to sauce. Add 'Extra' and arrowroot if necessary.
- 10.Just before serving, add lemon gremolata and/or Bombay mix.
Notes
- Alternative cut: 9 large thighs and 9 large drumsticks may be used instead of 12 small thighs and 12 drumsticks.
- 'Extra' sauce for adjusting: 1 cup chicken stock with 1 t. medium curry paste and ½ t. turmeric — add and thicken with arrowroot if needed.
- Lemon Gremolata (to serve): rind of 2 lemons (can add orange rind if desired), 2 crushed garlic, handful of finely chopped fresh coriander.
- The 4 cups boiling water and 1 t. chicken stock powder together form the 4 cups of chicken stock used in step 5.
