Rose's Chicken Recipe

Ingredients
- 1.2 whole chickens, jointed after roasting
- 2.paprika, for seasoning; amount to taste
- 3.chicken stock powder, for seasoning; amount to taste
- 4.onions, chopped; to make a bed for the chicken
- 5.water, a little; for the dish
- 6.450 gram smooth apricot jam, 16 oz tin; for glaze
- 7.500 ml 1000 island dressing, 2 x 250ml bottles; Kraft or similar South African brand
- 8.109 gram American mustard, 4 oz jar
Method
- 1.Season chickens well with the paprika and the chicken stock powder.
- 2.Put the chickens on a bed of chopped onion. Pour a little water in the dish. Roast uncovered. Turn and baste often. When golden brown and crisp, cool and joint.
- 3.Mix together the jam, the dressing and the mustard. Pour over chicken pieces.
- 4.Cover with foil and heat through for 20 minutes in a 180°C (350°F) oven.
Notes
- The recipe provides two quantity options — the full version above (for 2 chickens) and a smaller version: 340g tin smooth apricot jam, 1 x 375ml Steers 1000 island dressing, 109g jar American mustard.
- Steers is a South African fast-food chain; their 1000 island dressing is widely available in SA. Kraft is the international alternative.
- The chicken can be roasted a day ahead, jointed and refrigerated, then sauced and heated through before serving.
