- 1.24 chicken wings
- 2.Lawry's Seasoned Salt and Pepper, for seasoning
- 3.4 tablespoon ground coriander, for rolling wings
- 4.4 tablespoon ground cumin, for rolling wings
- 5.4 tablespoon coarsely ground cumin and coriander, mixed; for coating
- 6.1 cup chutney, for marinade
- 7.1 cup tomato sauce (ketchup), for marinade
- 8.4 tablespoon garlic and ginger paste, for marinade
- 9.teriyaki sauce or soy sauce, 2 tablespoons teriyaki OR 3 tablespoons soy sauce
- 10.2 tablespoon medium curry paste, for marinade
- 11.brown sugar, to taste; see notes
- 12.sesame seeds, for garnish
- 13.lemon rind, grated; for garnish
- 14.fresh coriander, for garnish
- 15.bamboo skewers, for serving
- 16.12 preserved orange, sliced; one slice per 2-person serving
Method
- 1.Season wings with Lawry's seasoned salt and pepper. Roll in ground coriander and cumin.
- 2.Coat with the following six ingredients mixed together: chutney, tomato sauce, garlic and ginger paste, teriyaki/soy sauce, curry paste, and brown sugar to taste. Marinate overnight if possible.
- 3.Bake uncovered for 1 hour 30 minutes to 2 hours or till crisp and golden.
- 4.Add water to bottom of baking dish to prevent burning. Replenish when necessary.
- 5.Serve two per person on a bamboo skewer with a slice of preserved orange. Sprinkle with sesame seeds, lemon rind and fresh coriander.
Notes
