Apples in Orange Juice

  1. 1.Cut orange peel into strips. Place in a pot, cover with water and boil for 10 minutes. Strain.
  2. 2.Reboil the blanched peel in clean water for a further 20 minutes. Drain.
  3. 3.Put orange juice with ¼ cup sugar in a large pot and bring to the boil.
  4. 4.Core and peel Granny Smith apples. Cut horizontally into thick rounds.
  5. 5.Add apples to the boiling orange juice along with the drained peel and seedless raisins.
  6. 6.Boil for about 10 minutes until apples are just tender.
