Apples in Orange Juice

Ingredients
- 1.orange peel, cut into strips
- 2.orange juice, fresh
- 3.0.25 cup sugar
- 4.Granny Smith apples, cored, peeled and sliced horizontally
- 5.seedless raisins
Method
- 1.Cut orange peel into strips. Place in a pot, cover with water and boil for 10 minutes. Strain.
- 2.Reboil the blanched peel in clean water for a further 20 minutes. Drain.
- 3.Put orange juice with ¼ cup sugar in a large pot and bring to the boil.
- 4.Core and peel Granny Smith apples. Cut horizontally into thick rounds.
- 5.Add apples to the boiling orange juice along with the drained peel and seedless raisins.
- 6.Boil for about 10 minutes until apples are just tender.
Notes
- Quantities for apples, raisins and orange juice not precisely stated on the card — scale to number of servings.
- The orange peel is blanched twice to remove bitterness before adding to the dish.
