Bananas Caribbean

Ingredients
- 1.1 teaspoon butter, for greasing baking dish
- 2.2 tablespoon butter, for dotting over bananas
- 3.0.25 cup brown sugar
- 4.0.25 cup orange juice
- 5.1 orange rind, grated
- 6.0.5 teaspoon ground cinnamon
- 7.4 tablespoon curaçao
- 8.6 tablespoon rum
- 9.6 bananas, peeled and sliced in half lengthways
Method
- 1.Preheat the oven to 200°C.
- 2.Grease a medium size baking dish with the 1 teaspoon butter.
- 3.Peel the bananas and slice in half lengthways. Place bananas in the baking dish, cut side up.
- 4.In a small bowl mix the sugar, orange juice, rind, cinnamon and the curaçao. Pour this mixture over the bananas.
- 5.Dot the bananas with the 2 tablespoons butter.
- 6.Bake for 15 minutes or until soft, basting once.
- 7.Sprinkle the bananas with the rum and serve immediately.
Notes
- Serve immediately — the rum is added right at the end and not baked.
