Beulah's Easy Bean Soup

Ingredients
- 1.250 millilitre white beans, soaked overnight
- 2.1 onion, large; cut up
- 3.vegetable oil, a little; for frying
- 4.2 litre water
- 5.30 millilitre soup stock powder, 2 tablespoons
- 6.tomato purée, 3–4 tablespoons; 45–60 ml
- 7.0.5 teaspoon cumin, ground
- 8.0.25 teaspoon bay leaf, ground
- 9.black pepper, ground; approximately ¼ teaspoon / 3 ml
- 10.1 teaspoon sweet paprika
- 11.1 teaspoon garlic salt
Method
- 1.Fry the onion in the oil until golden brown.
- 2.Add the beans, water and all the seasonings.
- 3.Cook until the beans are soft.
Notes
- prep_minutes includes overnight soaking (480 min = 8 hours).
- A simple, quick bean soup compared to the more elaborate Bean Soup (bean-soup.yaml) and Sybil's Quick Bean Soup (sybils-quick-bean-soup.yaml). No meat — purely vegetarian.
