Broccoli, Snow Pea and Mushroom Vegetable Mix

Ingredients
- 1.2 packet broccoli, separated into florets; blanched 2 minutes
- 2.2 packet snow peas, sliced in two on the diagonal; blanched 2 minutes
- 3.2 packet mushrooms, sliced; fried until most of liquid has evaporated
- 4.4 spring onion, chopped; added off heat
- 5.30 millilitre sesame seeds, toasted; or toasted flaked almonds; sprinkled on top before serving
- 6.60 millilitre soy sauce, added to mushrooms
- 7.30 millilitre honey, or golden syrup; added to mushrooms
- 8.salt and pepper, to taste
Method
- 1.Separate broccoli into florets. Blanch for two minutes.
- 2.Slice snow peas in two on the diagonal. Blanch for two minutes.
- 3.Set aside in fridge on ice for an hour or two. If waiting time is to be longer, remove ice. Line a bowl with paper towelling, throw over the broccoli and peas. Refrigerate until needed. The paper towel will absorb excess water.
- 4.Slice the mushrooms and fry until most of their liquid has evaporated. Add the soya sauce, honey, salt and pepper. Remove from stove and add the chopped spring onion.
- 5.Pour this mixture over the broccoli and the snow peas. Mix through and put all in a casserole dish. Reheat the entire dish in the microwave for 5–6 minutes.
- 6.Before serving, top with the sesame seeds or the almonds.
Notes
- Card note: 'This dish makes an enormous quantity — it will serve 12–15 people. I always halve it.'
- Components can be prepped well ahead; combine and reheat in microwave just before serving.
