Broccoli, Snow Pea and Mushroom Vegetable Mix

  1. 1.Separate broccoli into florets. Blanch for two minutes.
  2. 2.Slice snow peas in two on the diagonal. Blanch for two minutes.
  3. 3.Set aside in fridge on ice for an hour or two. If waiting time is to be longer, remove ice. Line a bowl with paper towelling, throw over the broccoli and peas. Refrigerate until needed. The paper towel will absorb excess water.
  4. 4.Slice the mushrooms and fry until most of their liquid has evaporated. Add the soya sauce, honey, salt and pepper. Remove from stove and add the chopped spring onion.
  5. 5.Pour this mixture over the broccoli and the snow peas. Mix through and put all in a casserole dish. Reheat the entire dish in the microwave for 5–6 minutes.
  6. 6.Before serving, top with the sesame seeds or the almonds.
