Cucumber Mousse

Ingredients
- 1.25 millilitre gelatine, sprinkled onto cold water to bloom
- 2.60 millilitre cold water, for blooming gelatine
- 3.cucumber, 3 cucumbers peeled, seeded and chopped; or 2 English cucumbers
- 4.250 millilitre mayonnaise
- 5.1 onion, medium; chopped and blanched
- 6.5 millilitre salt
- 7.black pepper, ⅛ teaspoon
- 8.10 millilitre lemon juice
Method
- 1.Sprinkle the gelatine onto the ¼ cup cold water. Dissolve over hot water.
- 2.Process all other ingredients in a food processor using the steel blade.
- 3.Mix through the dissolved gelatine.
- 4.Pour into a suitably sized, oiled mould. You can also use individual moulds.
- 5.Put in fridge to set.
- 6.Unmould and garnish.

- Card note: 'Chopped hard boiled eggs and smoked salmon make a good garnish.'
