Spinach Salad 3 (Elaine)

Ingredients
- 1.1 lettuce, shredded
- 2.spinach, equal amount to the lettuce; shredded
- 3.1 avocado, sliced and cubed; acidulated in lemon and orange juice
- 4.6 spring onions, snipped
- 5.3 eggs, hard-boiled; grated
- 6.croutons, from about 3 slices of bread
- 7.1 garlic, crushed; for dressing
- 8.2.5 millilitre salt, for dressing
- 9.15 millilitre lemon juice, for dressing
- 10.2.5 millilitre Worcestershire sauce, for dressing
- 11.45 millilitre salad oil, for dressing
Method
- 1.Shred the lettuce and the spinach.
- 2.Slice and cube the avocado. Acidulate the avocado cubes in some lemon and orange juice to prevent discolouration.
- 3.Snip the spring onion.
- 4.Make a dressing of the crushed clove garlic, salt, lemon juice, worcestershire sauce and the oil.
- 5.Just before serving, toss lettuce, spinach, avocado and spring onion in the dressing.
- 6.Top with the grated egg and the croutons.
