Farfel Apple Pudding

Ingredients
- 1.3 cup matzo farfel
- 2.water, cold; to cover farfel
- 3.3 eggs
- 4.0.5 teaspoon salt
- 5.0.75 cup sugar
- 6.0.25 cup pecans or walnuts, chopped
- 7.3 apples, peeled and grated
- 8.0.5 cup raisins
- 9.0.5 cup oil
- 10.ground cinnamon, to taste
Method
- 1.Mix matzo farfel with cold water to cover. Drain immediately, pressing out as much moisture as possible. Place in a bowl.
- 2.Add eggs, salt, cinnamon, and sugar to the farfel. Mix well.
- 3.Add chopped nuts, grated apples, raisins, and oil. Mix to combine.
- 4.Pour into a greased baking dish.
- 5.Bake at 180°C for about 35 minutes until nicely browned.
Notes
- A Passover dessert/pudding — matzo farfel (broken pieces of matzo) replaces wheat flour. Suitable for Passover.
- Farfel must be soaked and drained immediately — do not let it sit in water or it will become soggy.
- Cinnamon quantity not specified on card — add to taste.
