French Apples

Ingredients
- 1.4 Golden Delicious apples, halved; centre cavity scooped out; do not cut all the way through
- 2.2 Granny Smith apples, grated; sprinkled with lemon juice; mixed into filling
- 3.2 egg yolks, for filling
- 4.60 millilitre cream, 4 tablespoons; for filling
- 5.25 millilitre sugar, for filling
- 6.2.5 millilitre lemon zest, finely grated rind
- 7.salt, pinch
- 8.ground cinnamon, pinch; for filling
- 9.10 millilitre arrowroot, 2 teaspoons; thickener for filling
- 10.brown sugar, for sprinkling on top before final grill
- 11.5 millilitre sugar, for water at bottom of dish
- 12.375 millilitre water, for bottom of dish
Method
- 1.Place halved Golden Delicious apples in a baking or gratin dish and bake for 10 minutes in a 180ºC oven.
- 2.Combine all the reserved apple juice, cream, egg yolks, sugar, lemon rind, salt, cinnamon and arrowroot with the grated Granny Smith apple. Fill the cavities.
- 3.Sprinkle with brown sugar. Place the sugar and water in the bottom of the dish.
- 4.Bake for another 20 minutes or until cooked through. Baste every 10 minutes.
- 5.Before serving, place under a grill until brown and bubbly.
