  1. 1.Place halved Golden Delicious apples in a baking or gratin dish and bake for 10 minutes in a 180ºC oven.
  2. 2.Combine all the reserved apple juice, cream, egg yolks, sugar, lemon rind, salt, cinnamon and arrowroot with the grated Granny Smith apple. Fill the cavities.
  3. 3.Sprinkle with brown sugar. Place the sugar and water in the bottom of the dish.
  4. 4.Bake for another 20 minutes or until cooked through. Baste every 10 minutes.
  5. 5.Before serving, place under a grill until brown and bubbly.
