Method

  1. 1.Place the tarragon, sprig of parsley and spinach leaves in a pot with a minimum of water. Boil for 3 minutes.
  2. 2.Squeeze the greens and add the liquid to the mayonnaise. This will colour and flavour it. (The mayonnaise will not colour immediately.)
  3. 3.Add the chopped spring onions and the chopped parsley.
