Green Mayonnaise

Ingredients
- 1.mayonnaise, 1 batch homemade; see mayonnaise-food-processor.yaml
- 2.fresh tarragon, a handful
- 3.parsley, a generous sprig
- 4.6 spinach leaves
- 5.2 spring onions, chopped; added after colouring
- 6.15 millilitre parsley, chopped; added after colouring
Method
- 1.Place the tarragon, sprig of parsley and spinach leaves in a pot with a minimum of water. Boil for 3 minutes.
- 2.Squeeze the greens and add the liquid to the mayonnaise. This will colour and flavour it. (The mayonnaise will not colour immediately.)
- 3.Add the chopped spring onions and the chopped parsley.

- A classic green sauce for cold fish, salmon, asparagus or artichokes.
