Ingredients
- 1.6 tomatoes, small; halved; placed on foil
- 2.10 millilitre brown sugar, mixed into seasoning
- 3.1.25 millilitre dried basil, or a little chopped fresh
- 4.0.6 millilitre salt
- 5.0.6 millilitre black pepper, freshly ground
- 6.15 millilitre lemon juice, mixed into seasoning
- 7.1.25 millilitre butter, dotted on tomatoes; small amounts
- 8.15 millilitre butter, larger amount also called for; dot generously
Method
- 1.Halve the tomatoes and place on a piece of foil.
- 2.Mix together the sugar, the basil, the salt, the pepper and the lemon juice. Sprinkle each tomato with a little of this mixture. Dot with the butter.
- 3.Cook under a preheated grill (two racks down) for 6–8 minutes.
- 4.Sprinkle with parsley and serve in a heated dish, with the cooking juices poured over.
Notes
- Alternative serving: blend 4 tablespoons cream with 1 tablespoon French mustard. Heat until just hot and pour over the tomatoes before serving. Garnish with mint if liked.
- Card lists butter twice (¼ teaspoon and 1 tablespoon) — likely the smaller amount is for the seasoning mixture and the tablespoon is for dotting the tomatoes.
