Method

  1. 1.Bring water, sugar and orange rind to the boil to make a syrup.
  2. 2.Pour syrup over the thinly sliced pineapple.
  3. 3.Stand for 2 hours.
  4. 4.Drain before baking.
  5. 5.Bake pineapple slices on greaseproof paper at 80°C for 4–6 hours.
  6. 6.Halfway through cooking time, lift pineapples gently and turn them over.
  7. 7.Once cooled, the pineapple should be very crisp and fragile.
