Ingredients
- 1.1 pineapple, peeled and sliced very thinly
- 2.600 millilitre water
- 3.400 gram sugar
- 4.orange rind, strips; to taste
Method
- 1.Bring water, sugar and orange rind to the boil to make a syrup.
- 2.Pour syrup over the thinly sliced pineapple.
- 3.Stand for 2 hours.
- 4.Drain before baking.
- 5.Bake pineapple slices on greaseproof paper at 80°C for 4–6 hours.
- 6.Halfway through cooking time, lift pineapples gently and turn them over.
- 7.Once cooled, the pineapple should be very crisp and fragile.
Notes
- These are decorative pineapple chips used as a garnish for plated desserts.
- The very low oven temperature (80°C) slowly dehydrates the slices to a crisp, translucent flower shape.
- Handwritten note: 'Drain before baking' — the slices should be well drained from the syrup before going in the oven.
- Cooking time: 4–6 hours at 80°C. Start checking at 4 hours.
