Ingredients
- 1.3 crayfish tails, cooked and diced
- 2.125 millilitre mayonnaise
- 3.83 millilitre tomato sauce (ketchup)
- 4.83 millilitre cream
- 5.Tabasco sauce, a dash
- 6.283 gram button mushrooms, tinned; with their liquid
Method
- 1.Cook and dice the crayfish.
- 2.Combine the remaining sauce ingredients (mayonnaise, tomato sauce, cream, tobasco) to make a sauce.
- 3.Lightly blend with the crayfish.
- 4.Put in a double boiler.
- 5.Add the tin of button mushrooms with the gravy.
- 6.Heat thoroughly and serve with buttered rice.
Notes
- In South Africa, 'crayfish' refers to rock lobster (spiny lobster).
- The double boiler ensures gentle, even heating without the sauce breaking or scorching.
