Jane's Cabbage Fritters

Ingredients
- 1.cabbage, ½ a medium head; finely grated
- 2.2 potatoes, finely grated
- 3.60 millilitre plain flour
- 4.2 eggs, beaten
- 5.salt and pepper, to taste
- 6.oil, for frying; mixed with 1 tablespoon butter
- 7.15 millilitre butter, mixed into frying oil
Method
- 1.Mix all ingredients together.
- 2.Fry tablespoons of the mixture in oil that has been mixed with a tablespoon (15 ml) of butter.
- 3.Drain and serve.
Notes
- Adding butter to the frying oil gives the fritters a richer colour and flavour.
