Mayonnaise Made in a Food Processor

Ingredients
- 1.eggs, 1 whole egg plus 1 extra yolk
- 2.5 millilitre salt
- 3.5 millilitre mustard powder, dry
- 4.10 millilitre icing sugar
- 5.Tabasco sauce, a dash
- 6.15 millilitre salad oil, added first with vinegar
- 7.15 millilitre white vinegar, added first
- 8.salad oil, 250–310ml; the more oil, the thicker the mayonnaise; added slowly
- 9.30 millilitre white vinegar, added after main oil
- 10.15 millilitre water, boiling; added last
Method
- 1.Put the whole egg plus the yolk, the salt, the mustard powder, the icing sugar, the Tabasco, the 1 tablespoon oil and the 1 tablespoon vinegar into the bowl of the food processor.
- 2.Process with the steel blade for a few seconds.
- 3.Immediately, start to slowly add the 1–1¼ cups oil.
- 4.Now add the further 2 tablespoons white vinegar.
- 5.Finish with the tablespoon of boiling water.
Notes
- The more oil added, the thicker the mayonnaise.
