Modern Caesar Salad

Ingredients
- 1.125 millilitre olive oil or salad oil, ½ cup; good quality
- 2.30 millilitre red wine vinegar
- 3.10 millilitre Worcestershire sauce
- 4.2 garlic, large; cut in half; removed before serving
- 5.black pepper, a dash
- 6.2.5 millilitre salt
- 7.Maggi seasoning, a sprinkling
- 8.Tabasco sauce, a few drops
- 9.125 millilitre blue cheese, finely crumbled
- 10.125 millilitre Parmesan cheese, grated
- 11.500 millilitre croutons
- 12.1 egg, added to dressing just before serving
- 13.1 Romaine or Cos lettuce, do not tear — keep leaves whole
Method
- 1.Shake together the first 8 dressing ingredients (oil, vinegar, Worcester sauce, garlic, pepper, salt, Maggi, Tabasco). Chill in fridge overnight to blend flavours.
- 2.Sprinkle cheeses over lettuce in bowl. Do not tear this lettuce.
- 3.Add croutons.
- 4.Remove garlic halves from dressing. Add egg to the dressing. Blend very well.
- 5.Pour dressing over salad.
Notes
- The dressing is made a day ahead — it improves overnight. The recipe calls 'Modern' because it uses blue cheese alongside Parmesan.
- Note: the egg is added raw to the dressing — a classic Caesar technique.
