Ingredients
- 1.225 gram butter, grated into bowl
- 2.1 cup sugar
- 3.3 teaspoon baking powder
- 4.1 egg
- 5.5 tablespoon milk and water, half milk, half water — approximately 2½ T each
- 6.salt, pinch
- 7.plain flour, 4–5 cups; enough for a soft workable dough
Method
- 1.Grate the butter into the bowl and cream well with sugar.
- 2.Add egg. Beat well.
- 3.Add milk and water mixture and mix well.
- 4.Add baking powder, flour and salt. Mix well. Dough should be soft but workable.
- 5.Roll on a floured board until thin. Cut out various shapes.
- 6.Beat an egg in a glass and brush the biscuits generously with egg wash.
- 7.Dip each biscuit in sugar.
- 8.Place biscuits fairly closely on a greased baking sheet.
- 9.Bake in a 400°F (200°C) oven until golden brown.
Notes
- Handle carefully — these biscuits are fragile.
- Flour quantity: '4–5 small cups' — add enough to form a soft but rollable dough.
- The unusual technique of grating cold butter (rather than softening at room temperature) is noted in the recipe.
