Muffaletta

Ingredients
- 1.1 Italian white loaf, sliced in half horizontally; a little soft bread removed from insides; brushed with olive oil
- 2.olive oil, to brush insides of bread
- 3.prosciutto, layered inside
- 4.provolone, or substitute any cheese
- 5.eggplant, sliced and fried
- 6.red capsicum, roasted
- 7.marinated mushrooms
- 8.mortadella, sliced
- 9.artichoke hearts, halved
- 10.sun-dried tomatoes
- 11.salami, sliced
- 12.olives, mixed
Method
- 1.Take the loaf of bread, slice it in half horizontally and remove a little of the soft bread from the insides. Brush the insides with a little olive oil.
- 2.Layer the ingredients in any combination and order you like.
- 3.Put the top back on the bread. Wrap in foil and weight down for several hours before eating.
- 4.If you pack the loaf at the bottom of the esky with everything else on top, it will be perfect by picnic time.
- 5.Cut into wedges or slices and serve.
