My Salad Dressing

Ingredients

• 1.5 millilitre salt
• 2.20 millilitre sugar
• 3.black pepper, freshly ground; a generous grinding
• 4.white vinegar, 2 scant tablespoons
• 5.135 millilitre salad oil, 9 tablespoons

Method

1. 1.Blend together the salt, sugar, pepper and vinegar.
2. 2.Beat in the oil slowly until the dressing has emulsified.

Notes

• Titled 'MY SALAD DRESSING' on the card — a personal everyday vinaigrette. The name suggests this is the author's standard house dressing.
• Appears on the same page as Sybil's Salad Dressing — Sybil's uses fancy nut oils; this one is the simpler everyday version.
