Pauline's Cabbage-Celery Salad

Ingredients
- 1.1 cabbage, grated using largest Magimix grating disc
- 2.1 celery, about 10 stalks; stalks and leaves finely chopped
- 3.5 millilitre salt, for dressing
- 4.2.5 millilitre black pepper, for dressing
- 5.250 millilitre sugar, for dressing
- 6.250 millilitre white vinegar, for dressing
- 7.3 garlic, for dressing; processed with vinegar mix
- 8.250 millilitre salad oil, added slowly to emulsify
- 9.1 onion, chopped; stirred in after emulsifying
Method
- 1.Grate the cabbage using the largest grating disc of the Magimix (or food processor).
- 2.Chop the celery finely — stalks and leaves.
- 3.Put salt, pepper, sugar, vinegar and garlic in bowl of Magimix. Process for a few seconds.
- 4.Add oil slowly through the funnel until the dressing has emulsified.
- 5.Stir in the chopped onion.
- 6.Pour over the cabbage and celery. Marinade for about 8 hours before eating.
Notes
- One of two cabbage salad recipes from Pauline — this one uses celery and a Magimix-emulsified dressing.
- Must marinade at least 8 hours before eating.
