Quick Matzo Meal Stuffing

Ingredients
- 1.1 onion, grated
- 2.1 celery, grated
- 3.1 carrot, grated
- 4.1.75 cup matzo meal
- 5.2 eggs
- 6.0.67 cup chicken stock
- 7.3 tablespoon oil
- 8.salt and pepper, to taste
Method
- 1.Grate the onion, celery and carrot.
- 2.Combine with matzo meal, eggs, chicken stock and oil. Season with salt and pepper and mix well.
- 3.Use as a stuffing for chicken or turkey, or bake separately in a greased dish.
Notes
- A Passover stuffing — matzo meal replaces breadcrumbs, making this suitable for Passover.
