Rock Crayfish

Ingredients
- 1.kingklip fillets, filleted
- 2.water, for poaching
- 3.onion, added to poaching water
- 4.carrots, diced; added to poaching water
- 5.cocktail sauce, see Crayfish Cocktail recipe
Method
- 1.Boil filleted kingklip for 10–15 minutes in a little water with onion and diced carrots. Do not allow to become too soft — just cook through.
- 2.Allow to cool in the liquid.
- 3.Break into biggish pieces and fold into cocktail sauce.
- 4.To serve: cut rounds of hot toast with a glass. Butter the rounds and let cool. Heap mock crayfish on the rounds, trim and serve.
Notes
- A quick mock crayfish using kingklip. The cocktail sauce is not specified — use the sauce from the Crayfish Cocktail recipe in this collection.
