Method

  1. 1.Boil filleted kingklip for 10–15 minutes in a little water with onion and diced carrots. Do not allow to become too soft — just cook through.
  2. 2.Allow to cool in the liquid.
  3. 3.Break into biggish pieces and fold into cocktail sauce.
  4. 4.To serve: cut rounds of hot toast with a glass. Butter the rounds and let cool. Heap mock crayfish on the rounds, trim and serve.
