Method

  1. 1.Gently fry the onions until pale golden brown. Drain and process until fine.
  2. 2.Debone and flake the snoek finely.
  3. 3.Fold into the onions. Season with the pepper, the mayonnaise and horseradish sauce.
  4. 4.The horseradish sauce is optional but I find it gives a nice bite.
  5. 5.Serve with crisps.
