Shelley's Snoek Dip

Ingredients
- 1.onions, 7–8 large; gently fried until pale golden brown; drained; processed until fine
- 2.500 gram snoek, deboned and flaked finely
- 3.black pepper, to taste
- 4.mayonnaise, 1–2 tablespoons
- 5.horseradish sauce, 1–2 tablespoons; optional but recommended
Method
- 1.Gently fry the onions until pale golden brown. Drain and process until fine.
- 2.Debone and flake the snoek finely.
- 3.Fold into the onions. Season with the pepper, the mayonnaise and horseradish sauce.
- 4.The horseradish sauce is optional but I find it gives a nice bite.
- 5.Serve with crisps.
Notes
- Snoek = Thyrsites atun, a long, oily, strongly-flavoured South African fish. Commonly smoked or braaied.
- A classic South African party dip — strong flavoured and very popular.
