Ingredients
- 1.1 smoked yellowtail, whole; or similar smoked fish
- 2.1 litre cream, whipped
- 3.750 millilitre champagne, folded into whipped cream
Method
- 1.Line a suitably sized baking dish with foil. This enables you to lift the fish out easily.
- 2.Lay the fish down on the foil.
- 3.Whip the cream and fold in the champagne.
- 4.Pour over the fish.
- 5.Seal the dish with more foil and bake in a moderate oven until heated through.
Notes
- The scan shows '4 cups' beside '1 litre cream' and '15 cups' beside '750 ml champagne' — the 1 litre/4 cups conversion is correct, but 750 ml is approximately 3 cups, not 15. The '15' may be a typo for '1½' cups — see uncertainty.
- Bake time is not specified — a 'moderate oven' is approximately 180°C/350°F; heat until the fish is warmed through.
