Method

  1. 1.Line a suitably sized baking dish with foil. This enables you to lift the fish out easily.
  2. 2.Lay the fish down on the foil.
  3. 3.Whip the cream and fold in the champagne.
  4. 4.Pour over the fish.
  5. 5.Seal the dish with more foil and bake in a moderate oven until heated through.
