Shirli's Layered Potatoes

Ingredients
- 1.potatoes, peeled; thinly sliced (magimix recommended)
- 2.garlic, cloves; halved; for rubbing dish
- 3.oil, dribbled over each layer
- 4.seasoned flour, 1 teaspoon salt and ½ teaspoon pepper per ½ cup flour
Method
- 1.Peel and slice potatoes thinly. The Magimix (food processor) does this quickly and efficiently.
- 2.Grease a shallow baking dish. Rub the dish very well with the cut cloves of garlic.
- 3.Lightly dust the potatoes with the seasoned flour.
- 4.Layer the potatoes in the dish. Dribble a little oil over the layer. Continue until the dish is full.
- 5.Cover the dish with tin foil and bake in a 350°F/180°C oven for one hour.
- 6.Remove foil and continue baking until the potatoes are crisp and golden brown. This could take another 45 minutes.
Notes
- Card note: 'You may use sweet potatoes in the same way but slice the sweet potatoes through their length.'
- The seasoned flour on each layer creates a crispy texture between layers.
- Total bake time: approximately 1 hour 45 minutes (1 hour covered + 45 minutes uncovered).
