Shirli's New Potatoes

Ingredients
- 1.500 gram new potatoes, scrubbed well; skins left on; small 'V' shaped cuts on one surface of each potato
- 2.1 chicken stock cube, crumbled; dissolved in boiling water with beef cube
- 3.1 beef stock cube, crumbled; dissolved in boiling water with chicken cube
- 4.500 millilitre water, boiling; stock cubes dissolved in this
Method
- 1.Scrub the potatoes well. Leave the skins on. Make 3 small 'V' shaped cuts on one surface of each potato.
- 2.Dissolve the cubes in the boiling water.
- 3.Put the potatoes into a greased dish. Pour over the stock.
- 4.Bake in a 350°F (180°C) oven for about an hour or until fork-tender. Baste often.
Notes
- Card note: 'Cutting the V's into the potatoes allows the flavours of the stock to steep into the potatoes. It is not essential to cut the V's.'
