Stewed Plums

Ingredients
- 1.400 gram sugar
- 2.1000 millilitre water
- 3.5 millilitre vanilla essence
- 4.2 millilitre almond essence
- 5.12 red plums, washed; do not peel
Method
- 1.Make a sugar syrup using the sugar, water and essences.
- 2.Bring to the boil and let simmer 5 minutes.
- 3.Add the washed plums and simmer, covered, until softened.
- 4.Chill in the syrup.
- 5.Do not attempt to peel plums. The skins will disappear during poaching.
- 6.Remove plums with a slotted spoon and put into a suitable bowl.
- 7.Strain over the syrup.
Notes
- The plum skins dissolve during poaching — no need to peel.
