Method

  1. 1.Make a sugar syrup using the sugar, water and essences.
  2. 2.Bring to the boil and let simmer 5 minutes.
  3. 3.Add the washed plums and simmer, covered, until softened.
  4. 4.Chill in the syrup.
  5. 5.Do not attempt to peel plums. The skins will disappear during poaching.
  6. 6.Remove plums with a slotted spoon and put into a suitable bowl.
  7. 7.Strain over the syrup.
