Sybil's Quick Bean Soup

Ingredients
- 1.250 millilitre sugar beans, soaked overnight in boiling water
- 2.56 gram butter, or 4 tablespoons / 60 ml oil
- 3.1 carrot, grated
- 4.1 onion, grated
- 5.1 turnip, grated
- 6.4 tomatoes, ripe; peeled and sliced
- 7.1.5 litre beef stock, use 3 cubes; approximately 1½ litres
- 8.2 bay leaves
- 9.black peppercorns, a few
- 10.15 millilitre tomato paste
- 11.8 millilitre salt
- 12.3 millilitre black pepper, ground
Method
- 1.Cover the beans with boiling water and leave to soak overnight.
- 2.Melt the butter and gently fry the carrot, onion and turnip.
- 3.Add the tomatoes and cook a further 5 minutes.
- 4.Add the stock, the beans and the seasonings. Cook 2–3 hours.
- 5.Readjust seasoning and serve.
Notes
- prep_minutes includes overnight soaking (480 min = 8 hours).
- Appears on the same card as Beulah's Easy Bean Soup (beulahs-easy-bean-soup.yaml).
- Despite the name, this still requires 2–3 hours cooking — 'quick' refers to the simplified method compared to the full Bean Soup (bean-soup.yaml).
