Sybil's Salad Dressing

Ingredients

• 1.7.5 millilitre wine vinegar
• 2.15 millilitre vinegar, white or malt
• 3.7.5 millilitre sugar
• 4.5 millilitre salt
• 5.5 millilitre mustard powder, dry
• 6.60 millilitre sunflower oil
• 7.15 millilitre olive oil
• 8.15 millilitre walnut oil or hazelnut oil

Method

1. 1.Blend together the two vinegars, sugar, salt and mustard powder until combined.
2. 2.Add the sunflower oil, olive oil, and walnut or hazelnut oil. Blend until emulsified.

Notes

• The use of walnut or hazelnut oil gives this dressing a distinctive nutty character — a more elaborate vinaigrette than the standard household version.
