To Roast Peppers

Ingredients
- 1.peppers, washed; roasted whole
- 2.2.5 millilitre salt, for seasoning purée
- 3.5 millilitre sugar, for seasoning purée
- 4.black pepper, sprinkling
- 5.1 garlic clove, for seasoning purée
Method
- 1.Roast washed peppers in a 200ºC oven for 30 minutes or until black and blistered.
- 2.Steam until cool in a plastic bag.
- 3.Peel, remove seeds and ribs.
- 4.Season with salt, pepper, a little sugar and garlic.
- 5.Purée if desired.
Notes
- A technique guide — useful as a base preparation for many other recipes.
- Steaming in a plastic bag after roasting makes the skin slip off easily.
- Keeps well in the fridge for several days, or freeze for longer storage.
