Marinade 1 (Woolworth's)

Ingredients
- 1.500 gram kingklip, whole piece
- 2.50 gram butter, melted; for marinade
- 3.25 millilitre lemon juice, for marinade
- 4.1 garlic, crushed
- 5.2.5 millilitre Worcestershire sauce
- 6.5 millilitre parsley, chopped
- 7.salt and black pepper, to season fish
Method
- 1.Combine butter, lemon juice, garlic, Worcestershire sauce and parsley to make the marinade/sauce.
- 2.Take a sheet of foil and make a 'boat' to hold the fish.
- 3.With a sharp knife, make criss-cross cuts across the top of the fish.
- 4.Season the fish with salt and pepper.
- 5.Put the fish in the 'boat' and cover with half the sauce. Do not close the foil.
- 6.Bake in a pre-heated oven for 30–35 minutes at 180°C (350°F).
- 7.Baste and add more sauce as needed during baking.
Notes
- The foil 'boat' keeps the fish moist while allowing the top to colour.
- Criss-cross cuts allow the marinade to penetrate the flesh.
- Woolworth's here refers to Woolworths South Africa — a premium supermarket chain (unrelated to the UK/US variety stores of the same name).
